I like to start my semesters asking students in the first few classes what they are hoping to cook. I usually preface it with 'I don't have the budget for steak so other than that what are some things you might be interested in learning how to make?'
I find if gives me a flavor for the class make up and preferences. If I can adapt some lessons to include their desires I try to. This semester my students wanted to do sushi so here is the lesson I put together.
We will be uber blessed to have Chef Jon Korecki from Top Chef Canada Season 2 and All Stars and previous Executive Chef to the Canadian Ambassador to Japan come and lead us in our sushi unit.
